Grown - St Lucia 🇱🇨 

Description - A small size breadfruit, firm, green turning to brown around 1kg weight.

I cleaned the breadfruit well to remove any dirt and latex. Peeled with a sharp knife, cut into quarters, removed the central core from each piece then sliced into thin pieces approximately 1cm thick.

I soaked the breadfruit slices in salt water for 1 hour then drained and dried off lightly on kitchen towel.

Fried in hot coconut oil for 3 or 4 minutes either side until golden brown and soft, then covered in cajun seasoning. Enough for 3 servings.

Storage - I kept the breadfruit

in the fridge for 4 days before cooking.
